I used not to take breakfast and in fact I used to skip breakfast altogether until I started working from home around covid time and there was less distraction for me. I started to make my own healthy breakfast recipes especially considering that I wanted my daughter to have a healthy breakfast too.
I started to make my own homemade yoghurt and realized that my daughter could not take it without the sweetened part. Because I was trying to make it healthier for us, I explored ways on how to mix my yoghurt and that is how I discovered this recipe. if you want to check out my homemade yoghurt recipe as well. This recipe is pretty straight forward and doesn’t require you to have fancy cookware; so let’s get right into it!

Ingredients
- 500g whole oats
- 1 cup roasted peanuts
- 1/2 cup pumpkin seeds
- 1/2 cup flax seeds
- Honey 5 Tbs or to taste and olive or coconut oil
- Peanut butter or any other nut butter
- chia seeds
- cinnamon
- ginger (optional)
- coconut flakes (For daily toppings)
Steps

Collect all necessary ingredients for your granola, Ensure you have everything you need before starting.

lay your parchment paper on pan and spread. mix all ingredients together; I like to add grated ginger in my own because i like the flavor and taste but you can totally leave that out.

Preheat your oven to 180c or you can use air flyer if you are making a smaller batch.

Mix in the honey mixed with the olive or coconut oil. Mix well, spread and bake for 10-15 min at 180c

Once they have browned, remove and leave on counter to dry. when they have cooled down, they will be crunchy. Store in Tupperware and seal shut. Enjoy!
